How many times does yesterday’s bread end up in the bin because it has gone hard? It is a small, almost automatic gesture, yet multiplied by millions of households it becomes a huge number. The United Nations Environment Programme (UNEP) Food Waste Index Report 2024 estimates that 1.05 billion tonnes of food were wasted in 2022, about 19% of the food available to consumers. Some 60% of that waste happens in homes, an average of roughly 79 kilograms per person per year.
Bread is a telling case, because it is one of the easiest foods to rescue. Italian cooking, and not only Italian, has always known this: Tuscan ribollita began as a vegetable and bean soup made with the previous day’s bread, pappa al pomodoro and panzanella soften it with tomato and water, Trentino canederli turn it into tasty dumplings, and breadcrumbs add crunch to dozens of dishes. Other cuisines do the same: from Spanish torrijas to English bread pudding, stale bread becomes an ingredient, not a leftover.
How do you do it in practice? First: store it well. Bread keeps better in a cloth or paper bag, away from damp; if you know you will not finish it, slice and freeze it so you can toast one slice at a time. Second: think about reuse before it is too late. Hard bread can be grated into breadcrumbs, cubed into croutons, soaked for soups and meatballs, or toasted for bruschetta. Third: a common-sense warning, bread with visible mould should be thrown away whole, without trying to cut off only the spoiled part.
Cutting waste does not take heroic gestures. It is enough to look again at what we already have at home and give it a second chance, often through dishes with a history and a flavour that “quick” dishes lack. It is also a simple way to save money and to pass on to children a sense of respect for food and for those who produce it.
